Becoming “cheap” doesn’t just happen overnight for most people in the world.  It usually happens out of necessity or it’s apart of your over all lifestyle.  Here at CheapStir we don’t descriminate anyone who is looking to make good quality cheap meals to feed their loved ones.  In fact we wish more people would eat out less so they could just see how much they are spending per week and also what goes into their meals; yes there are some really almost worth being obese foods out there.  We must appreciate food as not just a product or a necessity but something of pride.

Philosophical ideals aside, I think what we are doing here at CheapStir is going to spread across the table(so to speak).  I only wish I could cook nearly as good as my grandma could but just because I can’t doesn’t mean I should stop trying or even to stop coming up with my own version that with a lot of work might be one day step above her culinary skills for down home cooking.

So what we have here is a sodium drenched, vegetarian, high protein, keep you full for hours almost questionably cheap recipe.  I say questionable because using lentils in this recipe can be so easily adding to in order to fill even the pickiest eaters palette.  I think adding carrots and celery really gives this dish some “bulk”.  Give it a try and you will see that something so simple and cheap can be something that brings a smile to your stomach.

Ingredients
Servings: 1/2 cup servings
Instructions
  1. Diced up your onion, carrots, celery, garlic and mushrooms.
  2. Heat up your oil in a small pot on the stove on medium high heat then saute your veggies until softened and the onion has become clear. Add in your rinsed lentils and saute for 30 seconds.(this adds loads more flavor!)
  3. Add in your veggie broth and bring to a boil then turn to low and cover for 20 minutes.
  4. Add salt and pepper to taste when the lentils have doubled in size and you are all ready to eat! Simple healthy protein packed cheap meals are great =D
