Do you like chicken? Coconut? How about curries?

Well if you said yes to any or all of them I promise you will enjoy this ridiculously simple coconut chicken curry recipe.

Like most Americans growing up in the Midwest, I was never exposed to the delicious treat that is “curries”. Beef, chicken, pork, fish, and veggie curries have all been relatively new to me. Yes, your kitchen and clothes will smell of very potent exotic spices, but it’s going to be SO worth it in the end!

Cheapstir is all about living simply, but simply does not mean living with low quality. All it takes is a little patience and creativity to come up with something unique and original. . .and TASTY of COURSE! Most of us do not have all the time in the world to get all of the things done we would like to, so tonight let’s make dinner easy.

I can eat this for breakfast, lunch, or dinner. This recipe has served me well as i’m sure if you follow this recipe it will also serve you just as well. Tweak it however you’d like but always remember to come back and check out Cheapstir when your hungry again.

Ingredients

Instructions
  1. Most of the ingredients you will need.
  2. Heat the coconut oil in a pan on medium high heat.
  3. Add the chopped onion to the heated pan and saute until onion is clear or 4-5 minutes. Add curry, chili and garlic powder and saute for 1 minute.
  4. Oil or butter the inside of your slow cooker or crock pot and turn it on low.
  5. To the sauteed onions stir in the coconut milk, tomato paste, salt & pepper. Reduce heat to low and add corn starch and whisk until all lumps are gone. Turn off the heat.
  6. Add your chicken bits into the slow cooker and then pour the curry sauce over the chicken.
  7. Mix the chicken + curry well.
  8. Cover the slow cooker and keep the setting on "low" and let it cook for 5 hours.
  9. If you want some delicious rice to serve with this chicken curry just add some white jasmine rice to boiling water, then cover and set heat to low a half hour before serving with this dish.
