Hi there folks,

Today I want to share a simple easy delicious recipe that I stumbled across and sort of tweak it a bit to fit my taste. I hope you will do the same or at least try this version first and then get creative!

If you switch to a veggie broth instead of the chicken broth that I used this could totally be a vegetarian dish. The quinoa provided a bunch of nutrients for your body most notably proteins and carbohydrates to help fuel your day.

Ingredients

  1. "The line up"
  2. Heat a large skillet to medium high heat and add 1 tbsp oil. Add minced garlic and the chopped jalapeno pepper. Sauté for 1 minute.
  3. Add the rest of the goodness into the skillet. Tomatoes, black beans, corn, cumin, cayenne, chili powder, red pepper flakes, chicken broth (or vegetable broth for vegetarian), quinoa, salt and pepper.
  4. Bring to a boil then cover with a lid and lower the heat to a simmer. Cook for 20 minutes or until the quinoa has absorbed most of the liquids.
  5. Remove from heat and add the cilantro, green onions and avocado. Mix together.
  6. This can be served right away. Add some tortillas chips or sour cream if you wish to make this into a crowd please'r or a party dip.
  7. All foods should be this colorful!
