So it’s a new year and that means many folks are looking to lose some of those holiday pounds, if you know what I mean?

I was craving something warm and light on the stomach that would be good on a cold day. I have used Miso (soy bean paste) in the past a handful of times, but it never occurred to me to make the traditional Japanese soup with it. Side note, Miso paste is salty and thick generally and tastes great dipping baby carrots into…you didn’t here that blasphemy from me hahaha!

If you’ve never bought Miso paste before it can be found in either the refrigerated Asian foods section or sometimes comes in a bottle. I used the bottle this time, which I had never used before. It wasn’t as thick as the cooled version so if you like a thicker soup buy the former.

This is a fast dish to make and I highly recommend pairing this with either some rice or Soba noodles (and maybe just a tab of soy sauce). Don’t be afraid to try new things…sometimes it can taste great! -Cheapstir.

Instructions
  1. Ingredients used.
  2. Chop those veggies.
  3. I cut my tofu into small cubes. This is optional if you do not like tofu.
  4. Nori should be chopped into bite sizes pieces.
  5. Oh boy, what a spread eh?!
  6. In a medium pot heat the water to a small simmer and add in the Nori cooking uncovered for 5 minutes.
  7. Add in the Miso paste and lightly stir. If the paste is thick you can add a splash of hot water with it in a separate bowl to thin it out before adding.
  8. Add in the chopped onions, tofu, and kale. Cook for another 5 minutes.
  9. Add the Soba noodles to a pot of boiling water. Cook until noodles are tender 2-4 minutes.
  10. Light and filling. This is a great winter or comfort food when your wanting something warm and quick. Enjoy my friends.
