Okay I gotta admit that winter is my least favorite season. Sure the holidays are great but up here in the northern United States the cold can take it’s toll on the frail human body. Hahaha just kiddn’; sort of!

If there is something that I DO look forward to in the winter it’s the hearty warm meals I get busy making to tide me over until the sweet smell of spring comes around again.

So, with that irrelevant short backstory out of the way, here is my “take it from me” delicious Chunky Cheddar Broccoli Potato Soup.

  1. First things first, let's wash the broccoli and potatoes. Then add 1 tbsp of oil to a large pot on the stove; turn the heat to medium heat.
  2. Chop the potatoes and broccoli to however large or small you like. *I like my soups to be hearty and chunky just fyi.

  4. 1)Add garlic to the heated pot and cook while stirring for half a minute or so. Add kale, flour, & seasonings to the mix. Stir for another 30 sec. Add chicken broth, chopped potatoes & milk. Bring it to a boil, cover and set heat to medium-low & let it cook for 15 minutes.
  5. After the potatoes are soft, add feta cheese & the chopped broccoli. Stir into the mix and let it cook for 10 more minutes uncovered.
  6. Taste the soup and make any adjustments you would like. i.e. more salt, pepper, onion, etc.. Add the sharp cheddar cheese and stir until fully melted and combined.
  7. The end results is even better than expected, really! I had to dish out a couple servings immediately and top them witha little (lot) of the feta and cheddar cheese.
  8. The kitchen smelt so good while cooking this meal and I hope you guys enjoy making it and consuming it as much as I did.
