I had a craving the other day. I missed breakfast again but had too much leftover rotisserie chicken on hand to not use. I came across a recipe for a chicken taco pie but the only problem was I didn’t have any pie making material around so I improvised.

Welcome to the Chicken Taco Skillet Cake. With creativity, buttermilk pancake mix, and a growling stomach which craved breakfast for lunch I began to assemble what I thought would be an abomination.

I put my years of watching MacGyver tutorials to work on this day, a great and glorious day befitting a king! (eh, well sorta).

This is very simple to cook up and actually turned out great in the end. I topped my Chicken Taco Skillet Cake with a bit of salsa and sour cream which was really tasty. It has a hint of sweetness like pancakes but a strong savory spicy and smoky flavor that’s hard to put words to. Some people will see this and say “that is gross” but many others will keep an open mind and “give it a go” and they really should.

I hope you enjoy my Frankenstein recipe that gave me a big surprise just how tasty it was.

  1. Preheat oven to 400 degrees. Use up to 2 cups of already cooked chicken and shred it up into bite size bits. Cut up and finely chop a small onion.
  2. In a large bowl add the chicken, chopped onion, and taco seasoning (I used homemade). Give it a good mix to coat the chicken in the seasoning
  3. Coat a skillet with oil or butter. I placed my chicken in first, which in hindsight I think I would mix the chicken into the cake batter first before adding to my skillet. *I would recommend the latter for an even distribution of chicken my friends. Otherwise you end up with all of the chicken on the bottom layer, which isn't bad just not ideal.
  4. Pour the batter mixture into the oiled skillet. I added some ground black pepper for taste and also presentation. Bake in the 400 degree oven for 30 minutes or until a knife can be inserted and removed from the cake cleanly.
  5. Remove the skillet from the oven or place cheese on top and put back into the oven for 2 minutes. Let cool for a couple of minutes after cooking before serving.
  6. Here is a slice without cheese and you can see the bottom layer of chicken.
  7. I added some cheese (optional) to my Chicken Taco Skillet Cake and set my oven to broil for about two minutes to make sure it was completely melted.
