Bacon Egg Peanut Butter Sandwich with Sweet Potato Hash Browns $2.17

Hi there,

I woke up this morning to the smell of falling leaves in the cold chilled air. #windowopen I guess that means fall is nearly here already. I actually like fall very much, so of course this means everyone will begin to cook warm hearty meals again…and I am TOTALLY okay with that!

If you’ve followed my recipes than you will know that I like to do things with a little bit of a different take on something traditional. So here is another tasty Cheapstir creation. I call it….

the Bacon and Egg Peanut Butter Sandwich with homemade Sweet Potato Hash Browns.

*Tip: If you want to go the extra step, I think you can get even better results making hash browns by grating then wrapping them in a paper towel to squeeze and drain and excess water in them before cooking them. Also, be careful no to leave the potatoes in the skillet for too long because they will begin to burn faster than you would think.

Ingredients
Servings:
Instructions
  1. Wash and then cut off the skin of the sweet potato.
  2. Use the large section of a cheese grater to get it all "hashy".
  3. I added some S&P to my taters.
  4. Use any REAL butter you wish, but this is the best butter I have tried!
  5. Heat up a cast iron skillet (or non stick pan) to medium high heat and melt 2 tbsp of butter and fry the hash browns.
  6. *I used too much heat with my cast iron skillet so beware. Turn the heat to medium heat if using a cast iron skillet as they hold heat better than non-cast iron. (you live and you learn right? Still tasted delicious btw).
  7. Set your cooked sweeter than sweet hash browns to the side and let them cool while we do the rest.
  8. Melt about a tbsp of butter and fry an egg. About two minutes each side. Then remove egg.
  9. Cook the strips of bacon in the skillet for about 2 minutes on each side then remove.
  10. Grab some bread (I used whole wheat and lightly toasted it).
  11. Spread some delicious creamy peanut butter onto the bread.
  12. Now layer the ingredients...
  13. I really enjoy when good things come together.
  14. Homemade breakfasts served!
